Oaty banana pancakes


Daddy is having a lie in so we are having scrummy pancakes for breakfast!

Here is my recipe:

100g plain flour
100g porridge oats
Pinch of salt
2.5 tbsp sugar
1 tsp baking powder
100g sultanas
2 tbsp melted butter
150ml milk
1 egg
1 sliced ripe banana
Pinch of ground nutmeg and cinnamon (optional)


Throw everything except the banana in a bowl and mix it up. You will end up with a pretty thick mixture. Add the banana last if you like banana chunks. If you’d prefer a banana flavour without chunks, mash it first and then add to the mixture. If you aren’t using banana at all, you may want to add a little more sugar.


Melt a little butter in a frying pan over a medium heat. When it’s melted, add a couple of dollops of the mixture, and shape them into pancakes.


When the underside is golden brown carefully flip them over. The oats in this recipe make them slightly more crumbly than regular pancakes (but make them delicious too!)


Serve straight from the pan with butter, syrup, honey or jam. Or why not add more fresh bananas and a scoop of ice cream to make it a dessert?
