Speedy treat: Warm cookie and ice cream


As a quick Friday night treat after dinner, I decided to whip up some cookie, serve it while still warm with a lump of ice cream on top. If I was doing it for a party or something I’d probably make cookie shapes, but just for us guys at home, one big slab is sufficient! Quick and easy but delicious, and minimum washing up.
Here’s my recipe:

100g sugar
100g softened butter, or margarine
150g self raising flour
Tbsp honey (optional or can be changed for syrup)
Any extras you want to use: spices, raisins, choc chips etc. We used a tsp of mixed spice.

Mix butter, honey and sugar first, then add flour and mix. Lastly add your extras if you are having any (also tasty without!)

Spread on a lined baking tray, don’t be too concerned about how it looks, it will be in your belly too soon for it to matter! It will look like this:


Bake in a preheated oven at 180 degrees for 10-15 mins. Enough time to wash up, the very small pile of washing you’ve just made!


Take it out when it’s golden brown, it should still be pretty soft if you touch the top of it, not at all firm.


Leave to stand for one minute.
Roughly cut a square and throw it in a bowl while still hot (when it cools it will go firmer – still yummy but not the same effect!) Add a scoop of ice cream, extra toppings if desired (we had maple syrup) and scoff immediately. You don’t even have to sit down if you don’t want to, you could just stand at the kitchen counter and scoff it. Mmmm!


Cut any left over cookie into random shapes while still warm and store in a tin for scoffing tomorrow.
