Yummy treat: Ginger and sultana cup cakes


The cupboards were almost bare and we were feeling peckish, so I decided to make a few cupcakes. These are perfect with a hot drink and I find them less sickly than regular cupcakes.


Here is my recipe:

200g self raising flour
200g brown sugar
60g softened butter
1 egg
1 1/2 tsp ground ginger
1/2 tsp mixed spice
100g sultanas (or other dried fruit if you wanted!)
200ml water
3 tbsp syrup or honey if desired, I used honey but golden syrup is yummy with ginger


Mix dry ingredients with butter to make breadcrumb type mixture. Add wet ingredients and mix it all up. Add sultanas last and mix well.

Use a muffin tray and line with paper (or silicone) liners. If you don’t have either of those, you could always try greasing the holes well and putting the mixture straight in.

I put a heaped tbsp of the mixture into each case.

Put in the middle of a preheated oven at 180 degrees, for 15-20 mins. Check in the last minutes, they are ready when a knife slides out clean.

We loved them!
